Great read, and totally on point. (I was thinking a little about that topic this weekend as I was going through the character creation for Dragon Age II, but more from the "they can't figure out how to light dark skin properly" angle, since characters with darker skin tones just often don't show up correctly in-game. Like the hair problem, it is because nobody has cared enough at a high enough level to get it right consistently. On the flip side, I like that the game alters the appearance of your family members (both hair and skin tone) if you make your character darker skinned. The hair choices were... awful, but I like that they had at least thought about enough to do that.) - Jennifer D. - -

Gravlax tip! Scale the fish (or get the fishmonger to do it) before you cure it. Then, after the cure, when you skin the fish, instead of discarding the skin, you can crisp it up in the pan. After it's mostly cooked, you can drizzle it with a bit of maple syrup if you'd like a little sweetness too.
